5 Ways to Use Up Leftover Easter Eggs

Easter is right around the corner, which means that it’s time to eat copious amounts of calories in the form of extravagant Easter eggs, cakes, and other super-sweet treats! 

Even if you’re hosting an impromptu Easter party at home due to “stay-at-home” directives, it’s likely that you’ll still have a few spare eggs to make use of once the festivities are over. 

To help you get the most out of your chocolate stash, we’ve thought of a few creative sweet recipes to use up any leftover Easter eggs this spring.

Making chocolate bark is a great way to use up all of your leftover Easter treats to create something even more delicious! All you’ll need for this incredibly easy recipe is a range of leftover sweets and your chocolate Easter eggs.

Ingredients

  • Leftover chocolate/white chocolate Easter eggs
  • Leftover sweets and snacks 

Instructions

  1. Line a large tray with non-stick parchment paper. Break your Easter eggs into a glass bowl and heat up over a pan of simmering water until the chocolate has melted and is smooth. 
  2. Pour the melted chocolate onto your parchment-lined tray and spread evenly over the surface. If you have white chocolate, use the same method to soften it and add swirls of white chocolate to your milk chocolate base.
  3. Add your leftover sweets and snacks to the chocolate while it’s still melted. Once you’ve finished, leave your bunny bark to set at room temperature and break it into shards once it’s set!

Ingredients

Scale
  • 10 fl oz. milk 
  • 14 oz. strong white bread flour
  • 2 oz. of cocoa powder
  • 1 packet of instant yeast
  • 1 tsp ground cinnamon 
  • 1 large egg
  • 1 tsp vanilla extract
  • 2.5 oz. of raisins
  • 2.5 oz. of leftover chocolate egg, broken into small pieces
  • 2 oz. of white chocolate 
  • 2 ounces of plain flour

Instructions

  1. Set two tablespoons of milk aside for later, but warm the rest in the microwave or a small pan. In a separate mixing bowl, mix the flour, cocoa, yeast, sugar, and cinnamon.
  2. Whisk the large egg and vanilla extract into the warm milk. Mix the liquid mix into the dry ingredients and stir together to make a dough. Transfer the soft dough onto a clean work surface and knead for 10 minutes. Your dough should become smooth and elastic.
  3. Put the dough back into a clean mixing bowl, cover with oiled plastic wrap and leave it until it’s doubled in size – this should take around an hour. 
  4. Once risen, knead raisins and chocolate pieces into the dough gently.
  5. Line a large baking tray with parchment paper, divide the dough into 12 and roll each portion into a ball. Arrange your buns onto the tray and leave some room for rising. Score a cross into the top of each hot cross bun and cover the tray with more plastic wrap until they have doubled in size again. 
  6. Preheat your oven to 375F. Melt your white chocolate and mix with 2 tablespoons of milk and add the plain flour slowly to make a smooth paste. Add your mixture to a piping bag and save for the next step.
  7. Use the leftover milk to glaze your buns and put them back into the oven for 15 mins. After this, pipe your white chocolate mixture into the groves on the buns and leave them to bake for another 5 minutes.

  • 14 graham crackers
  • 3.5 ounces of butter (melted) 
  • 18 ounces of ricotta cheese
  • 3 eggs (beaten) 
  • 1 tsp of vanilla extract 
  • 7 ounces of cheap dark chocolate (melted)
  • 4.5 ounces of icing sugar
  • 36 mini chocolate eggs

Instructions

  1. Preheat your oven to 150F. Line a muffin tin with 12 paper or eco-friendly muffin liners. Put the graham crackers in a ziplock bag and smash into small crumbs with a rolling pin. Tip the crushed graham crackers into a bowl and stir in the melted butter until the crumbs are coated evenly. Once done, spoon into the muffin cases and press the crumbs down until they form a firm layer on the bottom. 
  2. For the filling, put the ricotta, eggs, vanilla, and melted dark chocolate into a large mixing bowl. Use a sieve to sift in the icing sugar and mix everything together until very well combined. Spoon the cheesecake mixture into the cases until to the top, then tap the whole tin on a table to get rid of any air bubbles. Bake your mini cheesecakes for 30 minutes, then remove from the oven and gently place three mini eggs into the top of each cheesecake. Make sure your desserts have cooled completely before serving.

Notes

They can be kept in the fridge for up to 3 days!

  • 5 ounces of leftover chocolate, dark chocolate, or white chocolate easter eggs
  • Popping candy 
  • Edible sprinkles or glitter
  • 12 lollipop sticks

Instructions

  1. Draw an egg shape onto a piece of plain paper. This should be about 6cm long to make 12 lollies. Use this as a template to draw 12 egg shapes onto a large piece of parchment paper.
  2. Melt your chocolate in a glass bowl over a pot of simmering water. Add a few sprinkles or edible glitter to your egg shapes on your parchment paper and pour chocolate over the top in the same shape. Add your popping candy to the liquid chocolate and pour a little more on the top to disguise it. Once done, use blu-tack to hold your lollipop sticks in place at the bottom of your chocolate egg. When the chocolate has set, peel your lollipops off the parchment paper and hand them out to your friends!

If you have a basketful of delicious Easter eggs, this is the perfect recipe to try this spring. This will help you to use up a whole load of chocolate and add a coconut twist that will take your treats to the next level!

Ingredients

  • 2 sticks of butter (melted)
  • ½ a cup of golden caster sugar
  • 2 tbsp of golden syrup 
  • 2 crushed Weetabix 
  • 3 tbsp of cocoa powder
  • 1 cup and 1 tbsp of plain flour
  • 1 tsp baking powder
  • 1 tsp vanilla extract
  • 9 oz. of easter egg chocolate (For the topping)
  • ¾ cup of desiccated coconut
  • 2 tbsp of unsalted butter (melted) (For the topping)

Instructions

  1. Cut baking parchment into a 7.8″ x 7.8″ square, and use this to line a tin of the same size. Once completed, preheat the oven to 350F.
  2. Excluding the ingredients for the topping, mix the ingredients in a large bowl. 
  3. Spoon the mixture into the parchment-lined pan and make sure it is completely level. The mix should go right to the edges.
  4. Cook in the oven for 30 minutes.
  5. Once done, leave to cool completely in the tray.
  6. Melt the chocolate over a pan of simmering water or in the microwave in 30 seconds intervals (stir in between each interval). Stir in the 2 tablespoons of melted butter and pour over the top of the cooked coconut mixture (while it’s still in the tray).
  7. Once the topping is evenly spread, leave it to set in the fridge for at least 45 minutes. After this, remove from the tray and place it on a chopping board. Slice into 9 large squares, or 36 small cubes.
