Fresh Watermelon Cake is a refreshing change from traditional cake. A delicious way to share summer’s bounty!

Ingredients

Scale
  • ½ of a seedless watermelon, rind trimmed and removed, shaped in a dome
  • 8 ounces heavy whipping cream
  • 2 tablespoons powdered (confectioner’s) sugar
  • 3 to 4 kiwi, peeled and sliced
  • 1½ cups sliced almonds
  • ½ pint fresh raspberries
  • ½ pint fresh blueberries

Instructions

  1. Whip heavy cream with an electric mixture until stiff peaks form.
  2. Add powdered sugar and whip to combine.
  3. Place prepared watermelon, flat side down, on a serving platter.
  4. Frost with whipped cream.
  5. Arrange kiwi around bottom of watermelon.
  6. Add sliced almonds to the middle using hands to place them.
  7. Top with raspberries and blueberries.
  8. Serve immediately.
