Watermelon Cake with Fresh Whipped Cream Pinterest

Who knew there was such a thing as Watermelon Cake with Fresh Whipped Cream? Not me!  But, if you Google Watermelon Cake, bunches of choices pop up.  There’s a Paleo version made with full-fat coconut milk in place of the whipped cream and there’s a Cool Whip version, too.  My dear friend, Becky, made hers with fresh whipped cream, thus the title of this post – to distinguish it from other versions!

Recently, we celebrated my mom’s (and her twin’s) 84th birthdays.  Family and friends joined together for a catered Mexican feast.  Are you shocked that I used the word “catered”?  Yep.  I catered a party instead of making the food myself.  Well, I made a little of the food; just not all the food.  It’s impossible for me not to get cooking in the kitchen {grin}!

Here’s why I catered most of the menu:  my mom, who is of Irish descent, loves certain Mexican recipes made by my neighbor and friend, Rosa.  Those recipes are on this site and you can see them through the links below:

I catered it with Rosa because I’ve never made these recipes without Rosa’s help.  In fact, I’ve never made them at all!  I’ve just watched Rosa make them and photographed her as she made them for this blog {grin}.

I know that this seems like an odd menu for a daytime birthday party, but heck, it was my mom’s birthday and I’m a firm believer in eating what you want at your birthday party {grin}!  In addition to those menu items, my mother loves Rosa’s Shrimp Cerviche, so Rosa made that, too.  Sorry, no recipe (yet) for that on this blog, but I’ll twist Rosa’s arm and have her teach me to make it someday!

And, as if this wasn’t enough food, I made my Mexican Corn Salad, Fiesta Coleslaw and Fiesta Skillet Corn Pudding!

So, it was quite a birthday feast.

On top of all that, my friend, Becky, brought the ingredients for her Watermelon Cake with Fresh Whipped Cream and made it right there on site!  What a treat!

I wasn’t really prepared to take pictures that day and my kitchen was a giant mess from all the food.  I find it difficult to remember to take pictures at parties when I’m the hostess (so much going on!), but halfway through her finishing the cake, I whipped out my camera and took these shots.

Watermelon Cake with Fresh Whipped Cream

Becky made fresh whipped cream using heavy whipping cream and a little bit of powdered sugar to sweeten it.  She cut a seedless watermelon in half and then carved the rind from around it, leaving a domed round watermelon base.

Then, she “frosted” it with the fresh whipped cream, placed sliced kiwi around the bottom, sliced almonds around the middle and topped it with fresh raspberries and blueberries.

Did I mention that it’s delicious?  It’s delicious and by the end of the day, there wasn’t any left!  Watermelon Cake with Fresh Whipped Cream – a light, refreshing summertime dessert!

Fresh Watermelon Cake is a refreshing change from traditional cake. A delicious way to share summer’s bounty!

Ingredients

Scale
  • ½ of a seedless watermelon, rind trimmed and removed, shaped in a dome
  • 8 ounces heavy whipping cream
  • 2 tablespoons powdered (confectioner’s) sugar
  • 3 to 4 kiwi, peeled and sliced
  • 1½ cups sliced almonds
  • ½ pint fresh raspberries
  • ½ pint fresh blueberries

Instructions

  1. Whip heavy cream with an electric mixture until stiff peaks form.
  2. Add powdered sugar and whip to combine.
  3. Place prepared watermelon, flat side down, on a serving platter.
  4. Frost with whipped cream.
  5. Arrange kiwi around bottom of watermelon.
  6. Add sliced almonds to the middle using hands to place them.
  7. Top with raspberries and blueberries.
  8. Serve immediately.
