Vampire Repellent Dip is a garlic lover’s dream! Plus, with the addition or orange bell pepper, it is orange for Halloween!
In these photos, next to the orange tablecloth and the orange pumpkin-shaped tortilla chips, Vampire Repellent Dip looks yellow. But, it is, truly, a lovely shade of orange! And, if you are looking for a way to naturally dye food orange without using artificial food coloring or food gel, orange peppers do a good job!
The outer cloves of garlic within a head of garlic, are larger than the ones underneath. I had a new, untouched head of garlic and used 3 large cloves from the outside of the head. These 3 large cloves gave this dip an intense garlic flavor. So, if you want the essence of garlic, but not the overpowering bite of garlic, use less! Or use smaller cloves!
But, one bite into the dip, the name popped into my head – Vampire Repellent Dip {grin}!
These adorable Halloween tortilla chips are from Cost Plus World Market. The chips are cut into bat, ghost and pumpkins shapes, with the pumpkins dyed orange and the bats dyed black. Yes, the manufacturer used artificial food dye to get these colors, but I thought they would be fun for a one-time use at our little Halloween brunch the other day.
I’m a firm believer in using leftovers and am always experimenting with leftovers. Many months ago, I had a bag full of small yellow, orange and red peppers that were starting to loss their peak of freshness. Knowing Charlie and I couldn’t possibly use them all before they were no longer edible, I cut them up and froze them in separate bags – all the yellow together in a bag, all the orange, all the red.
I’ve been on a mission to clean out my freezer. I was actually going to write a post and call it “31 Days to an Empty Freezer”, but quickly realized there was no way that I could even make a dent in my freezer in 31 days! So, I abandoned that idea, but not the idea of working to empty our freezer.
The orange peppers in the freezer were calling to me…and Vampire Repellent Dip was born {grin}! By the way, I served this in an old, tarnished silver bowl, beyond salvation. I have a few things like that – inherited from relatives. They make great “props” for Halloween, so don’t discard old, tarnished silver; just repurpose it! I used a ceramic bowl that fit perfectly inside to actually place the dip in, so the dip does not come in contact with the old, tarnished bowl.
These happy little, sparkly jack-o-lanterns are so cute! They light up, too.
If you have orange bell pepper strips in your freezer, Vampire Repellent Dip takes about 5 minutes to make. But, I did defrost the orange bell peppers overnight in the refrigerator, first. If you don’t have frozen orange bell pepper handy, and have to resort to using a fresh orange bell pepper, this dip will take you about 10 minutes to make.
Here’s the recipe:
Vampire Repellent Dip
A garlic lover’s dream, this dip has a bit of heat from the intense garlic flavor and a bit of sweetness from the orange bell pepper.
- Prep Time: 5 mins
- Total Time: 5 mins
- Yield: 1 cup 1x
- Category: Dip
- Cuisine: American
Ingredients
- 1 large orange bell pepper, seeded and chopped
- 3 large cloves of garlic, smashed and peeled
- 1/2 cup mayonnaise
- 1/2 cup sour cream
- Tortilla chips for serving
Instructions
- Place all ingredients in a blender and whirl until pureed.
- Spoon into bowl and refrigerate until ready to serve.
- Serve with tortilla chips.
Notes
If using frozen peppers, defrost overnight in the refrigerator first and drain as much of the liquid that gathers as possible, before adding to the blender. If you want a less intense garlic flavor, use 2 cloves of garlic instead of 3 (or even 1 clove of garlic, if you want a mild garlic flavor).
