This is Carole’s version of Swedish Pancakes, adapted from an old Better Homes and Gardens recipe bookl

Ingredients

  • ¾ cup sifted all-purpose flour
  • 1 tablespoon granulated sugar
  • ½ teaspoon salt
  • 1¼ cups milk
  • 3 eggs
  • Butter or cooking spray (for cooking)
  • Melted butter (for serving)
  • Syrup
  • Powdered sugar

Instructions

  1. Sift granulated sugar, flour, and salt.
  2. In separate bowl, beat eggs till thick and lemon-colored.
  3. Stir in milk and whisk.
  4. Add flour mixture to egg mixture, mixing till smooth.
  5. Heat 8” non-stick skillet on medium-low heat.
  6. Add 1 tablespoon of butter or spray pan with non-stick cooking spray.
  7. Add ¼ cup of batter to hot pan and cook until bubbles form.
  8. Turn when underside is light brown and cook a few minutes more.
  9. Remove to serving plate; add more melted butter and sprinkle with powdered sugar.
  10. Roll each pancake into thirds and sprinkle again with powdered sugar.
  11. Serve with syrup.
