Thai Turkey Flatbread Pizza covers most of the major food groups! Plus, it’s so delicious and easy to make!

Ingredients

  • 1 Flatbread (I used a flatbread that is 16″ long by 6″ wide)
  • 1 tablespoon olive oil or olive oil spray
  • 1/4 cup bottled Thai Peanut Sauce (reserve 3 tablespoons)
  • 1 cup cooked sliced, shredded or chopped leftover turkey breast meat (can substitute cooked chicken)
  • 3 tablespoons Hoisin Sauce
  • 1 tablespoon honey
  • 1 tablespoon rice wine vinegar
  • 2 tablespoons toasted sesame oil
  • 1/2 teaspoon crushed red pepper flakes or dry chili flakes
  • 1/2 teaspoon ground ginger
  • 3/4 cup shredded mozzarella cheese
  • 1 slice of red onion (yes, one slice from an entire onion), cut in half and rings separated
  • 2 baby carrots, sliced on the diagonal
  • 2 sweet mini yellow peppers, julienned
  • 1 radish, julienned
  • 10 snow peas, sliced in half on the diagonal
  • 10 sprigs of cilantro, leaves removed from the stems
  • 1/4 cup lightly salted dry roasted peanuts, rough chopped

Instructions

  1. Preheat oven to 425 degrees.
  2. While oven is preheating, make your sauce/marinade.
  3. In a small bowl, mix together Hoisin sauce, honey, rice wine vinegar, toasted sesame oil, crushed red pepper flakes, ground ginger and 3 tablespoons of peanut sauce.
  4. Pour half of this mixture into a squeeze bottle or a separate bowl and set aside.
  5. Add leftover turkey breast meat to remaining sauce, toss to coat and set aside while you prepare other ingredients.
  6. Spray flatbread with olive oil spray or brush flatbread with 1 tablespoon of olive oil.
  7. When oven is hot, place flatbread directly on oven rack and bake 2 to 3 minutes.
  8. Remove from oven and slide onto a baking sheet.
  9. Spread 1/4 cup Thai Peanut sauce (except for the 3 tablespoons that you added to the marinade) over flatbread, smoothing with the back of a spoon.
  10. Arrange leftover turkey over flatbread and sauce.
  11. Top with cheese.
  12. Bake 5 minutes in preheated oven.
  13. Remove from oven and arrange red onion, carrots, yellow peppers, radish, snow peas on top.
  14. Return to oven and bake 5 minutes more.
  15. Remove from oven and add cilantro leaves and dry roasted peanuts.
  16. Drizzle sauce (reserved in squeeze bottle) over pizza.
  17. Transfer pizza to a cutting board and cut into 8 pieces.
  18. Serve immediately and pass around the leftover sauce.
