Thai Turkey Flatbread Pizza is one of our new family favorites. Charlie loves pizza, Pepperoni Pizza in fact, but he rarely gets it! For various reasons:
- I can’t eat Pepperoni Pizza because it gives me migraines. Yes, he can order his “own” Pepperoni Pizza just for him, but Charlie is in to “sharing” and likes to share things with me, his wife!
- We live in the country and the pizza restaurants won’t deliver to us!
- We’re on a diet, so Pepperoni Pizza isn’t on the radar!
- We don’t get out much!
Sidebar: just in case there are other migraine sufferers out there reading this post, let me explain WHY Pepperoni Pizza gives me a migraine. Maybe, just maybe, sharing my story about Pepperoni Pizza will help another migraine sufferer! The short version: if you, the migraine sufferer, have a sensitivity to food additives, Pepperoni Pizza is a triple whammy. Migraine sufferers can be sensitive to the yeast in pizza dough, the nitrates in pepperoni and aged cheese. Put them all together and, for me, instant migraine! Even super cheesy pizza can give me a migraine.
I adore pizza! It’s one of my favorite things. So what do you do if you love a certain food, but your body rejects it? You work to find a creative way to replace it!
So, this Thai pizza is a gift – a gift to me from me to give me the pleasure of having pizza a part of my life! Plus, I used leftover turkey meat from a turkey I made over the holidays. No turkey in your house? You can substitute chicken!
Disclaimer: there are a lot of ingredients to this Thai pizza recipe. I made it multiple times over many months, each time trying to improve upon the flavor. I think I nailed it this time – the flatbread provides a satisfying crunch, the cheese is just enough to taste the cheesy goodness, the turkey marinated in the special secret sauce (I guess it’s not a secret anymore {grin}) is flavorful and delicious, the crunch of the fresh vegetables – all these factors work together, miraculously, to make a truly great meal!
And, that’s the thing – this is a meal all in one for two people! A recipe for two, the turkey, cheese, bread, peanuts, vegetables and great spices all combine into a quick meal for a busy night. Plus, it covers most of the major food groups. The only food group not represented by this Thai pizza is fruit!

Ingredients
- 1 Flatbread (I used a flatbread that is 16″ long by 6″ wide)
- 1 tablespoon olive oil or olive oil spray
- 1/4 cup bottled Thai Peanut Sauce (reserve 3 tablespoons)
- 1 cup cooked sliced, shredded or chopped leftover turkey breast meat (can substitute cooked chicken)
- 3 tablespoons Hoisin Sauce
- 1 tablespoon honey
- 1 tablespoon rice wine vinegar
- 2 tablespoons toasted sesame oil
- 1/2 teaspoon crushed red pepper flakes or dry chili flakes
- 1/2 teaspoon ground ginger
- 3/4 cup shredded mozzarella cheese
- 1 slice of red onion (yes, one slice from an entire onion), cut in half and rings separated
- 2 baby carrots, sliced on the diagonal
- 2 sweet mini yellow peppers, julienned
- 1 radish, julienned
- 10 snow peas, sliced in half on the diagonal
- 10 sprigs of cilantro, leaves removed from the stems
- 1/4 cup lightly salted dry roasted peanuts, rough chopped
Instructions
- Preheat oven to 425 degrees.
- While oven is preheating, make your sauce/marinade.
- In a small bowl, mix together Hoisin sauce, honey, rice wine vinegar, toasted sesame oil, crushed red pepper flakes, ground ginger and 3 tablespoons of peanut sauce.
- Pour half of this mixture into a squeeze bottle or a separate bowl and set aside.
- Add leftover turkey breast meat to remaining sauce, toss to coat and set aside while you prepare other ingredients.
- Spray flatbread with olive oil spray or brush flatbread with 1 tablespoon of olive oil.
- When oven is hot, place flatbread directly on oven rack and bake 2 to 3 minutes.
- Remove from oven and slide onto a baking sheet.
- Spread 1/4 cup Thai Peanut sauce (except for the 3 tablespoons that you added to the marinade) over flatbread, smoothing with the back of a spoon.
- Arrange leftover turkey over flatbread and sauce.
- Top with cheese.
- Bake 5 minutes in preheated oven.
- Remove from oven and arrange red onion, carrots, yellow peppers, radish, snow peas on top.
- Return to oven and bake 5 minutes more.
- Remove from oven and add cilantro leaves and dry roasted peanuts.
- Drizzle sauce (reserved in squeeze bottle) over pizza.
- Transfer pizza to a cutting board and cut into 8 pieces.
- Serve immediately and pass around the leftover sauce.

It was yum! Even my husband, would is a meat and potatoes-type guy, loved it. It’s a keeper!
The plating and photography is beautiful. I have never had a pizza like this and it looks like something the whole family would try. I have been suffering from migraines since I was about 9. I have been on and off pretty much every medication out there. I’ve never really been able to pinpoint any food that cause it. I can’t say I get one from pepperoni pizza, but I do feel gross with any sort of carb overload. So, when I make my own pizza its usually some variation of cauliflower, chicken, flax, almond powder or wheat flour. At any rate, this looks delish and I can’t wait to show it to my husband to see if it would be something he would be interested in trying! (Stopping by from this weeks SITSTribe Challenge!)
