Sweetheart Pie Crust Cookies

Heart-shaped pie crust cookies made with store-bough dough sprinkled lavishly with sugar and sprinkles.

Fast and easy, these cookies are a great way to make a Valentine “statement” in a hurry. Plus, they are delicious – savory, sweet, crunchy – what’s not to like?

Ingredients

  • 1 package of 2-crust frozen pie crust dough, thawed
  • ⅓ cup unsalted butter, melted
  • 1 cup granulated sugar
  • 3 tablespoons cinnamon
  • ¼ cup of red sprinkles

Instructions

  1. Preheat oven to 375 degrees.
  2. Mix ½ cup of granulated sugar with the 3 tablespoons of cinnamon and set aside.
  3. Place remaining ½ cup of granulated sugar into a separate bowl and set aside.
  4. Line a baking sheet with parchment paper.
  5. Prepare a lightly floured surface to work with (I used a large wooden cutting board).
  6. Carefully unroll the dough onto the lightly floured surface and using a heart-shaped cutter (mine was 2 inches), press the cutter into the dough to cut out the cookies.
  7. Use a spatula to transfer the cut shapes to the cookie sheet.
  8. With a pastry brush, brush each cookie liberally with melted butter.
  9. Sprinkle 16 cookies with the cinnamon-sugar mixture, using a spoon.
  10. Next, sprinkle the 16 remaining cookies with the reserved granulated sugar and then sprinkle with the red sprinkles.
  11. Bake in preheated oven for 10 minutes (do not overbake because they will taste too done).
  12. Remove from oven and transfer to wire rack to cool completely.

Notes

You may need to use more sugar and more red sprinkles. It depends on how sweet you want them. Makes 32 cookies.
