Sweetheart Pie Crust Cookies are the perfect solution. Plus, they are so darn cute! Did I mention that they were delicious, too?
Made with store-bought pre-made refrigerated pie crust dough, butter, cinnamon, sugar, and sprinkles, these 5-ingredient treats are both savory and sweet plus satisfyingly crunchy. The “savory” shines through because of the saltiness of the pie crust dough and the “sweet” is the sugar added on top. The sweetness of these pie crust cookies is definitely in correlation to the amount of sugar you add on top. I say the more sugar the better, don’t you? After all, these are “treats” and aren’t made every day.
In fact, they are probably made only once a year. Or, monthly, if one makes different shapes for every holiday. Hey, that’s an idea! Stay tuned for Shamrock Pie Crust Cookies (just kidding; well maybe not! They are somewhat addicting.). This recipe makes 32 two-inch pie crust cookies and in my house, they were gone in 2 days!
Have you ever wondered what to do with leftover pie dough? I had a couple of leftover pie crust dough packages from pies I never made at Christmas. With the “use by” date looming, I decided it was now or never! Traditionally made with cinnamon and sugar, I only made half of them that way and then made the rest with red sprinkles. After all, these are Valentine’s hearts and I didn’t want all my Valentine hearts to be brown!
Brown heart – what does that mean? I shudder to think…
Maybe I should ask the Wicked Step-mother Queen Regina from the TV show, Once Upon a Time. Bet she knows all about brown hearts! Or black hearts…or bleeding hearts…or beating bleeding hearts. But, I digress…

I already had a heart-shaped cookie cutter that was just itching to be released from the drawer in which it had languished for the past year! Hey, there’s an idea for a storyline for the fictional Storybrooke – cookie cutters that come to life in their alter-ego human shapes. A heart cookie cutter could come back to life as the Queen of Hearts from Alice in Wonderland. Etcetera. Maybe I should pitch that to Adam Horowitz and Edward Kitsis, the creators of Once Upon a Time.
There I go…getting off-track again.
I’m including this picture so that you can see how many you can get out of one half of the 2-pie crust package. I was able to squeeze 10 hearts out of the initial attempt. Then, I squished together the remaining dough and re-rolled it again with a rolling pin and got a few more. Then, I re-rolled it again! By the time I was done, I got 16 hearts out of each pie crust or 32 out of the 2-pie crust package! And just enough leftover dough to pop in my mouth!

Fast and easy, these cookies are a great way to make a Valentine “statement” in a hurry. Plus, they are delicious – savory, sweet, crunchy – what’s not to like?
- Prep Time: 10 mins

Ingredients
- 1 package of 2-crust frozen pie crust dough, thawed
- ⅓ cup unsalted butter, melted
- 1 cup granulated sugar
- 3 tablespoons cinnamon
- ¼ cup of red sprinkles
Instructions
- Preheat oven to 375 degrees.
- Mix ½ cup of granulated sugar with the 3 tablespoons of cinnamon and set aside.
- Place remaining ½ cup of granulated sugar into a separate bowl and set aside.
- Line a baking sheet with parchment paper.
- Prepare a lightly floured surface to work with (I used a large wooden cutting board).
- Carefully unroll the dough onto the lightly floured surface and using a heart-shaped cutter (mine was 2 inches), press the cutter into the dough to cut out the cookies.
- Use a spatula to transfer the cut shapes to the cookie sheet.
- With a pastry brush, brush each cookie liberally with melted butter.
- Sprinkle 16 cookies with the cinnamon-sugar mixture, using a spoon.
- Next, sprinkle the 16 remaining cookies with the reserved granulated sugar and then sprinkle with the red sprinkles.
- Bake in preheated oven for 10 minutes (do not overbake because they will taste too done).
- Remove from oven and transfer to wire rack to cool completely.
Notes
You may need to use more sugar and more red sprinkles. It depends on how sweet you want them. Makes 32 cookies.
