Steak and Egg Salad

A delicious way to use both leftover steak or London Broil and hard-boiled eggs! All the flavor of a steakhouse dinner combined into a salad.

Ingredients

  • 1 head of romaine lettuce, washed, leaves removed from stem and patted dry
  • 6 slices of leftover London Broil
  • 10 red grape tomatoes
  • 10 yellow cherry tomatoes
  • 1 green onion, diced (both white and green parts)
  • ½ ripe avocado, peeled, seeded and sliced
  • 2 hard-boiled eggs, peeled and quartered
  • 4 tablespoons crumbled Feta cheese
  • 4 tablespoons favorite blue cheese salad dressing

Instructions

  1. Arrange clean romaine leaves on dinner plates, dividing between 2 plates.
  2. Add 3 slices of London Broil to each dinner plate.
  3. Place 5 red grape tomatoes and 5 yellow cherry tomatoes on each plate.
  4. Sprinkle one-half of the sliced green onion on each plate.
  5. Arrange one-quarter of the sliced avocado on each plate.
  6. Arrange one (quartered) hard-boiled egg around each plate.
  7. Sprinkle 2 tablespoons of Feta cheese over each plate.
  8. Dollop each salad with 2 tablespoons of blue cheese dressing.
  9. Serve.
