My Sister’s Famous Creamy Spinach Casserole – a Holiday Tradition

A very special side dish, similar to the famous Green Been Casserole, only better! Warning: you may need to make two pans!

Ingredients

  • 2 16 ounce bags of frozen spinach
  • 2 cans (10 3/4 ounces) of Cream of Mushroom Soup
  • 1 8 ounce package or 1/2 pound of cream cheese
  • 2 cups of French fried onions

Instructions

  1. Preheat oven to 350 degrees.
  2. Cook spinach according to package directions.
  3. Drain well, squeezing out all excess moisture.
  4. In a mixing bowl, combine soup and cream cheese on low-speed with a mixer.
  5. Add spinach and continue to mix until blended.
  6. Add half of the French fried onions, mix in gently until blended.
  7. Spread mixture into a 9″ x 13″ glass pan.
  8. Bake at 350 for 20 minutes.
  9. Remove from oven and sprinkle the remaining French fried onions over the top.
  10. Return to oven and bake for an extra 5 minutes or until onions are crispy and golden.
