This was a “look in the frig and see what we have” last minute creation. The kids loved it and so did the hubby!

Ingredients

Kid-Friendly version:

  • 4 hot dogs, cut into bite-sized pieces
  • ½ can corn, drained
  • 2 cups whole wheat spaghetti, cooked and drained per package directions
  • ½ teaspoon salt
  • Dash of pepper
  • 5 slices of American cheese

Adult version:

  • 4 hot dogs, cut into bite-sized pieces
  • ½ can corn, drained
  • Leftover Chili -or- Canned Chili
  • 2 cups whole wheat spaghetti, cooked and drained per package directions
  • ½ teaspoon salt
  • Dash of pepper
  • 1/4 onion, chopped
  • 2 slices of American cheese

Instructions

  1. Sauté hot dogs in frying pan for about 5 minutes.
  2. Add corn and mix together.
  3. Add cooked spaghetti and mix together.
  4. Sauté for about 10 minutes to blend flavors, stirring frequently.
  5. Add salt and pepper and mix together.
  6. Divide on 3 plates for the kids and add a slice of American cheese and melt in the microwave for about 30 seconds.
  7. Serve.
  8. For adult version, add onion to above mixture and sauté, stirring frequently.
  9. Warm up leftover chili in microwave.
  10. To plate, divide hot dog/spaghetti mixture on 2 plates.
  11. Add chili mixture to top.
  12. Place a slice of American cheese on each and melt in the microwave for about 30 seconds.
  13. Serve.
