The other night, I threw together something I called “Silly Summer Spaghetti”. I had 3 kids to feed that night (the Princesses P and a cousin), so I just looked in my fridge and decided to get creative with something easy and quick.
Here’s the recipe:

This was a “look in the frig and see what we have” last minute creation. The kids loved it and so did the hubby!

Ingredients

Kid-Friendly version:
- 4 hot dogs, cut into bite-sized pieces
- ½ can corn, drained
- 2 cups whole wheat spaghetti, cooked and drained per package directions
- ½ teaspoon salt
- Dash of pepper
- 5 slices of American cheese
Adult version:
- 4 hot dogs, cut into bite-sized pieces
- ½ can corn, drained
- Leftover Chili -or- Canned Chili
- 2 cups whole wheat spaghetti, cooked and drained per package directions
- ½ teaspoon salt
- Dash of pepper
- 1/4 onion, chopped
- 2 slices of American cheese
Instructions
- Sauté hot dogs in frying pan for about 5 minutes.
- Add corn and mix together.
- Add cooked spaghetti and mix together.
- Sauté for about 10 minutes to blend flavors, stirring frequently.
- Add salt and pepper and mix together.
- Divide on 3 plates for the kids and add a slice of American cheese and melt in the microwave for about 30 seconds.
- Serve.
- For adult version, add onion to above mixture and sauté, stirring frequently.
- Warm up leftover chili in microwave.
- To plate, divide hot dog/spaghetti mixture on 2 plates.
- Add chili mixture to top.
- Place a slice of American cheese on each and melt in the microwave for about 30 seconds.
- Serve.

I’ll have to try it. My husband likes all the ingredients so I’m sure he’ll love it.
It was pretty delish! I think I’d enjoy it more with homemade chili vs. the canned, but the idea was to use what I had! It was a hit though. 🙂
