Razzle Dazzle Skillet Dump Cake is too easy for something so sinfully delicious! And, I love the concept of dump cake, don’t you?  Just plop a few ingredients in a baking pan or skillet, throw it in the oven and in an hour, instant deliciousness!

But, here’s the thing about dump cake – it can be super sweet.  Sometimes so sweet that servings are left on the plate half finished with groaning guests explaining “it’s so delicious, but I can’t eat anymore!”

Imagine that – dump cake left behind!

Without the savory, salty pie crust to balance the sugary fruit from a can of pie filling, the sweet cake mix is sometimes just a little too much.  Add a scoop of ice cream on top and you are sure to dive into a sugar coma!

Made in a cast iron skillet, my Razzle Dazzle Skillet Dump Cake is a twist on the classic dump cake recipe, adding just a bit of savory to balance the sweetness.

So, what’s the twist?  You use only part of the box of cake mix!

That’s right – to make my skillet dump cake, you only use 1 cup of cake mix.  The standard box of cake mix, whether its Betty Crocker, Duncan Hines or Pillsbury weighs 15.25 to 16.5 ounces, but the cake mix inside measures 3 cups!

Did you know that?  I didn’t until I measured the cake mix.

What’s the savory?  Walnuts and oatmeal.  Mixed with the cake mix, they tone down Razzle Dazzle Dump Cake just enough to balance the sweetness.  And, we can kid ourselves that this is a “healthier version”, too, because of the added oatmeal and walnuts {grin}!

In my experience, many times when making dump cakes, the cake doesn’t cook on top leaving globs of cake mix dust strewn across the top of the cake.  And, the cake part that is golden brown is often gooey.  So, Razzle Dazzle Dump Cake is my solution to this dump cake dilemma but it does require a few extra steps.  Doesn’t this look good enough to eat?

It’s just dripping with hot berry goodness!

Critics will classify my Razzle Dazzle Dump Cake a cobbler instead of a dump cake.  But, however you classify it, it’s delicious with just the right balance of tartness from the fruit, the sugary sweetness of the cake mix plus the added crunch factor from the oatmeal and walnuts.

And, you still eat it with ice cream!  Life is good…

Oatmeal and walnuts combine with cake mix to give this dump cake just the right balance of sweetness.

Ingredients

Scale
  • 21 ounce can, each of blackberry pie filling and cherry pie filling
  • 1 cup of yellow cake mix
  • 1/2 cup of old-fashioned oats (not instant oats)
  • 1/2 cup walnuts, chopped
  • 5 tablespoons cold butter, divided
  • Vanilla ice cream (for serving)

Instructions

  1. Preheat oven to 325 degrees F.
  2. Grease a 10-inch cast iron skillet with 1 tablespoon of butter.
  3. Pour blackberry pie filling in skillet followed by cherry pie filling.
  4. Using a spoon, swirl spoon through pie filling, gently combining but not mixing them completely together.
  5. In a separate mixing bowl, add 1 cup of cake mix and oatmeal, tossing with fork.
  6. Cut remaining 4 tablespoons butter into 16 pieces (each tablespoon of butter cut into 4 pieces) and add to cake mix/oatmeal mixture.
  7. Using fingers, crumble butter into cake mix/oatmeal mixture until it resembles coarse crumbs.
  8. Spread evenly over berries in skillet.
  9. Sprinkle with chopped walnuts.
  10. Use spoon to make a few steam pockets in the cake mix/oatmeal crumble by pushing it aside until berries peek through.
  11. Bake in preheated oven for 45 minutes; check to see if berries are bubbling up through the crumble.
  12. If berries are not oozing up through the crust, remove dump cake from oven and use a regular dinner knife inserted in the crumble to move it aside and make a few more steam pockets.
  13. Return to oven and continue baking for 15 to 30 minutes until bubbly and golden brown.
  14. Serve warm from oven topped with a scoop of vanilla ice cream.

Notes

Can be made in a 7″ x 11″ baking pan. If using a glass pan, increase oven temperature to 350 degrees F.
