Mexican Caesar Salad combines a few classic salad ingredients, like romaine lettuce and chopped tomatoes, adds a few Mexican-inspired ingredients, and there you have it – a delicioso Mexican Caesar Salad!  The secret to its amazing flavor is the salad dressing – a homemade, restaurant-thentic copycat version of the salad dressing made famous by the California El Torito Mexican Restaurant chain.

Ingredients

  • 1 head of Romaine lettuce, washed, trimmed, and torn into bite-sized pieces or chopped
  • 1/4 cup roasted, salted pepita seeds
  • 1/4 cup crumbled Cotija cheese
  • 1 avocado, seeded and sliced
  • 1 large tomato, seeded and chopped into chunks
  • 1/2 cup tortilla strips (I used tri-color, store-bought tortilla strips)
  • 4 servings of The Best Ever Restaurant-thentic Mexican Caesar Salad Dressing

Instructions

  1. Place lettuce in a large salad serving bowl.
  2. Add all remaining ingredients and toss together.
  3. Top with Mexican Caesar Salad Dressing.

Notes

You can substitute the head of Romaine lettuce for two heads of Romaine hearts if you wish.

Also, you can place all ingredients into separate bowls, like a salad bar, and let everyone create their own salad to taste.

To make this salad the main course, add grilled chicken or steak.
