Meatloaf Surprise is a great way to incorporate hard-boiled eggs left over from your Easter Egg dyeing project. Delicious, too!

Ingredients

  • Non-stick cooking spray
  • 2 pounds ground beef
  • 1 pound ground sausage
  • 1/2 red bell pepper, seeded and chopped
  • 1/2 yellow onion, peeled and chopped
  • 3 cloves of garlic, peeled and finely diced
  • 2 eggs, beaten
  • 1/4 cup Worcestershire sauce
  • 1 teaspoon red pepper flakes (optional)
  • 1 teaspoon ground sage (optional)
  • 1 teaspoon salt
  • 1/2 teaspoon ground black pepper
  • 1/2 cup milk
  • 2/3 cup panko bread crumbs (or any bread crumbs)
  • 3 hard-boiled eggs

Instructions

  1. Preheat oven to 350 degrees.
  2. Line a large baking tray with heavy-duty aluminum foil.
  3. Spray the baking sheet with non-stick cooking spray.
  4. Prepare your veggies: chop the onion, red pepper and garlic and set aside.
  5. Put the ground meats into a very large mixing bowl.
  6. In a separate, smaller mixing bowl, beat the eggs and add the spices, Worcestershire sauce and milk and whisk to combine.
  7. Add the veggies, egg mixture and bread crumbs to the meat mixture and with clean hands, combine well, mixing only enough so that everything is incorporated.
  8. Transfer a little more than half of the meatloaf mixture to the prepared baking tray and shape into a loaf.
  9. Make a trench down the center of the loaf using your hands.
  10. Add the 3 hard-boiled eggs to the trench.
  11. Cover with rest of meatloaf mixture, shaping well.
  12. Bake in oven for 1 hour and 15 minutes.
  13. Transfer to serving platter, slice and serve.
