Leftover Turkey Salad Toasted Sandwiches are made with turkey meat leftover from boiling the turkey carcass to make turkey soup! But, you could use other parts of the turkey, if you aren’t into boiling the turkey carcass {grin}! But, I like using as much of a whole turkey has I can for a couple of reasons:
- I love homemade turkey soup!
- Using as much of the turkey as I can makes me feel thrifty.
- I like to think that I’m somewhat “green” in that I try to use it all up!
You can tell by this photo of my Leftover Turkey Salad Toasted Sandwich, that it is made with shredded turkey meat. That’s because I used the bits and pieces left from the turkey. But, any shredded or chunk turkey meat will do.
This particular turkey salad recipe combines all the traditional “flavors” of Thanksgiving: celery, onion, pecans and dried cranberries. A savory, delicious sandwich, the dried cranberries give it just a hint of sweetness. The pecans and celery contribute just the right amount of crunch. A combination of sour cream and mayonnaise deliver a creamy consistency, while toasting the bread adds another layer of texture.
Plus, by toasting the bread, you can skip the potato chips and skip those extra calories! With a glass of cold milk, Leftover Turkey Salad Toasted Sandwiches are another way to stretch the Thanksgiving holiday beyond Thanksgiving Day.
And, if you are trying to cut back on carbs, just scoop it on a bed of salad greens instead.

After Thanksgiving Leftover Turkey Salad Toasted Sandwiches
A great way to use holiday leftovers, this sandwich delivers!

Ingredients
- 1 rib of celery, finely diced
- 1/8 red onion, peeled and finely diced
- 1/2 cup dried cranberries
- 1/2 cup chopped pecans
- 1 1/2 cups shredded turkey
- 1/2 cup mayonnaise (made need more)
- 1/4 cup sour cream
- 12 slices favorite sandwich bread, toasted
Instructions
- Combine celery, red onion, dried cranberries, pecans, turkey, mayonnaise and sour cream.
- Mix well.
- Taste and add more mayonnaise, if desired.
- Spread 1/2 of turkey mixture (1/2 cup each) evenly over 6 slices of toasted bread.
- Top with other 6 slices of toasted bread.
- Cut in half and serve.
Notes
Makes 3 cups.
