Leftover Stuffing Meatloaf Pie cover

A creative and delicious way to use your leftover stuffing from your Thanksgiving and/or Christmas holiday celebration.

Ingredients

  • 2 pounds lean ground beef
  • 2 cups leftover cornbread stuffing
  • 1 egg
  • 1/2 cup milk
  • 1/2 teaspoon ground black pepper
  • 1 teaspoon salt

Instructions

  1. Preheat oven to 350 degrees F.
  2. Mix all ingredients in a large mixing bowl, by hand (just combine; don’t over-mix).
  3. Pat into a 9″ pie plate.
  4. Place pie plate on a baking sheet (to avoid dips) and bake in oven 45 to 55 minutes until nicely browned.
  5. Remove from oven and if meatloaf has made a lot of grease, carefully pour off grease into a heat-proof bowl and discard later once it has cooled.
  6. Cut meatloaf into wedges and serve at once.
