Silky and delicious, this rich dessert is worth the little extra time and effort!

Ingredients

  • 19 inch frozen pre-made pie shell
  • 3 ounces unsweetened chocolate, broken into pieces
  • 2 sticks (1 cup) butter, softened to room temperature
  • 1 cup granulated sugar
  • 4 pasteurized eggs
  • 1 teaspoon vanilla
  • Prepared whipped cream or non-dairy whipped topping for garnish
  • Mini chocolate chips or chocolate curls for garnish

Instructions

  1. Bake pie shell according to package directions and cool completely.
  2. Melt chocolate in small saucepan over low heat, stirring constantly, about 2 minutes.
  3. Removed from heat and cool completely, about 20 minutes.
  4. In mixing bowl, beat butter on medium speed with an electric mixer until creamy, about 5 minutes (this works best with a standing mixer).
  5. Add sugar and vanilla and continue beating until fluffy, about 2 minutes.
  6. Add chocolate, a little at a time and beat until well combined.
  7. Increase mixer speed to high and add eggs, one at a time, beating 2 minutes between each addition (mixture will increase in volume).
  8. Scoop chocolate mixture into cooled baked pie shell.
  9. Refrigerate for at least 2 hours or overnight.
  10. Garnish with dollops of whipped cream and chocolate chips or chocolate curls.

Notes

Preparation time includes cooling the chocolate and refrigerating the pie.
