Addictive and delicious, these ooey, gooey chocolate cookies are made with a cake mix and 2 surprise ingredients!

Ingredients

  • 115.25 ounce package of chocolate fudge cake mix
  • 13.9 ounce package of instant chocolate fudge pudding mix
  • 1/2 cup brown sugar
  • 3/4 cup canola oil
  • 1/3 cup water
  • 2 teaspoons vanilla extract
  • 1 egg
  • 1/2 cup mayonnaise
  • 1/2 cup old-fashioned oats
  • 1 cup semi-sweet chocolate chips
  • Non-stick cooking spray

Instructions

  1. Preheat oven to 350 degrees F.
  2. In a mini food processor, pulverize the oats until the consistency of all-purpose flour.
  3. Spray several cookie sheets with non-stick cooking spray.
  4. In a large mixing bowl, add 1/2 of the cake mix, the entire box of pudding mix, brown sugar, oil, egg, water and mayonnaise.
  5. With an electric mixer set on low speed, mix ingredients for a minute or two until well combined (the batter will be thick).
  6. Stir in the rest of the cake mix, oats and chocolate chips into the batter by hand.
  7. Using a cookie scoop that measures 1 tablespoon, scoop even amounts of cookie dough onto the prepared cookie sheets, spacing 2 inches or more apart (place only 8 on each cookie sheet – do not overcrowd).
  8. Bake for 10 minutes in a preheated oven.
  9. Remove from oven and allow to cool 5 minutes on cookie sheet.
  10. After 5 minutes, transfer cookies to a cooling rack to cool completely.

Notes

Do not overbake. They are dark and it’s hard to judge doneness. Cookies are “soft batch” with moist centers. No cookie scoop? Drop by teaspoonfuls onto prepared cookie sheet. Bake only one batch of cookies at a time in your oven. Baking more than one batch will cause them not to cook evenly and you will have some over done and others underdone. Have patience…it’s only 4 dozen cookies and they’ll be done in a flash. The 1 hour cooking time contemplates baking 6 batches of 8 (48) for 10 minutes in a single oven.
