What to do with leftover Easter eggs? Why Classic Egg Salad, of course! Serve this on a bed of lettuce or on your favorite sandwich bread.

Ingredients

  • 6 hard-boiled eggs, cold from storing in the refrigerator
  • 2 tablespoons mayonnaise (more if needed)
  • Salt (optional)
  • Pepper (optional)

Instructions

  1. Peel the hard-boiled eggs and rinse under cold water.
  2. Chop the eggs into small chunks and place in bowl.
  3. Add mayonnaise, a little at a time, until desired taste and consistency has been achieved.
  4. Serve on a bed of lettuce or make sandwiches.
