Cheesy Fiesta Salsa Chicken and Rice Bake is an easy and delicious dinner recipe for a busy night. Dump 6 simple ingredients in a casserole dish and bake! This easy prep casserole takes less than 10 minutes to assemble and dinner is served in under an hour.

  • 14.5 ounce jar of creamy cheese sauce (we used Ragu Double Cheddar Cheese Sauce)
  • 1 cup favorite mild salsa (we used Pace Chunky Mild Salsa)
  • 1 cup uncooked long grain white rice
  • 4 boneless, skinless chicken breast halves (approximately 1 1/4 pound weight total)
  • 1 teaspoon chili powder
  • 1/2 cup shredded cheddar cheese
  • Fresh cilantro sprigs, for garnish (optional)
  • More jarred salsa, for garnish (optional)
  • Sour cream, for garnish (optional)

Instructions

  1. Preheat oven to 350 degrees F.
  2. Dump cheese sauce, salsa and rice into a 13″ x 9″ x 2″ baking dish and stir to combine.
  3. Place chicken breasts over top of sauce mixture.
  4. Sprinkle chicken breasts evenly with chili powder.
  5. Cover the casserole dish with aluminum foil.
  6. Place casserole dish in oven and bake, covered, for 45 minutes.
  7. Remove from oven, uncover and sprinkle with shredded cheese; let stand for 10 minutes while cheese melts.
  8. Garnish with sprigs of cilantro and serve.
