Perfect little appetizer snacks – savory goodness with a touch of sweet!

Ingredients

  • 1 package (6 to a pack) oven-baked mini (4″ diameter) garlic-flavored flatbreads
  • 1/2 cup olive oil
  • 1 cup balsamic vinegar, reduced on stovetop to 1/4 cup
  • 1/4 cup sundried tomatoes, cut into small pieces
  • 1/2 cup shredded Parmesan cheese
  • 18 yellow and red cherry tomatoes, cut in half
  • 6 leaves fresh basil, torn

Instructions

  1. Preheat oven to 400 degrees F.
  2. Place flatbread on baking tray and brush each with olive oil.
  3. Add balsamic vinegar to a saucepan and cook over medium heat, stirring frequently, until vinegar is reduced to 1/4 cup and is thick and sticky.
  4. Drizzle sticky balsamic vinegar over each flatbread.
  5. Add bits of sundried tomatoes to each.
  6. Sprinkle each with Parmesan cheese.
  7. Add 6 tomato halves to each (3 yellow and 3 red).
  8. Sprinkle with torn basil.
  9. Place in pre-heated oven for 5 to 8 minutes until cheese is melted.
  10. Serve.
