Buttery Springtime Poppy Seed Dinner Rolls happened because of Pinterest! I keep seeing these adorable Easter Bunny dinner rolls all over Pinterest and knew I wanted to do something a little extra special for our holiday meal this weekend. But, as happens with Pinterest, when I clicked through on some of the photos, it did not take me to a recipe!
And, when it did take me to a recipe, some of the recipes were just a little too complicated for me at this stage of my “toot sweet” life! They required making dough from scratch (thumbs down – no time in my toot sweet life) or rolling the dough and twisting it into cute bunny shape (thumbs down, again – no time in my toot sweet life to twist individual bunnies to my will!).
I still wanted to try something, but it had to be easy. So I thought to myself, “self, what if I just use cookie cutters and let the dough rise?”
So, I found my Springtime cookie cutters – an egg shape, flower, butterfly and bunny! And, this is what happened:
- I used frozen bread dough to make my Buttery Springtime Poppy Seed Dinner Rolls. I allowed the bread dough to defrost, per package instructions. Then, I rolled it out on a floured surface with a rolling pin to form a rectangle and used my Springtime cookie cutters to cut out the shapes. Because the dough is elastic from the yeast, it is easier to give the cookie cutters a firm wiggle as you cut the shapes so that they cut the dough all the way through.
- Place them on cookie sheets and cover them with a clean dish towel.
- Allow them to rise three to six hours (depends on your climate) in a warm place.
- I melted a stick of butter in the microwave and added a tablespoon of poppy seeds to the melted butter. Using a pastry brush, I literally soaked them in butter {grin}! I’m sure it’s not necessary to use so much butter, but they were buttery-good and no need to have butter on your Easter table! I baked them in a 375 degree F oven for 12 to 15 minutes. Be sure to check them – you don’t want your masterpieces to burn!
Here’s a close-up of the butterfly and bunny dinner rolls. The flower and Easter egg just turned out kinda round – in other words, undistinguishable from their intended shape, so not worth the little bit of effort! I’d stick with butterflies and bunnies the next time I make Buttery Springtime Poppy Seed Dinner Rolls {grin}!
So cute, don’t you think? Charlie and I ate them all up over the next couple of days – so much for my diet!
The hardest part was rolling out the bread dough, which took a bit of elbow grease to get the rectangle big enough (it kept “bouncing” back to its bread pan shape!).
I’m definitely making Buttery Springtime Poppy Seed Dinner Rolls again for this weekend. But, this time, I’m going to only make bunnies because our Easter table is decorated with bunnies (and chicks, but mostly bunnies). To serve them, I put them in a napkin-lined Easter basket.
This recipe made 15 Buttery Springtime Poppy Seed Dinner Rolls, after the first initial cut-outs, by wadding up the dough, squishing it back into a ball and then re-rolling the dough. Don’t make the dough too thin or the Buttery Springtime Poppy Seed Dinner Rolls won’t rise enough and will be flat!

Ingredients
- 1 – 1 pound loaf of frozen bread dough, defrosted per package instructions
- 4 tablespoons (or more) melted butter
- 1 tablespoon poppy seeds
- All-purpose flour for dusting your work surface
Instructions
- Lightly flour your work surface.
- Dust bread dough and rolling pin lightly with flour.
- Roll defrosted bread out on your work surface into a rectangle.
- Use 3″ springtime cookie cutters (bunnies and butterflies) and cut out your rolls, wiggling the cookie cutter into the dough to make a clean cut.
- Carefully lift cut dough (I used a spatula) onto a clean cookie sheet, spacing about 2 inches apart.
- Cover cookie sheet with a clean dish towel and place in a warm location to allow to rise.
- Let rise 3 to 6 hours (mine took 4 hours).
- Preheat oven to 375 degrees F.
- Melt butter in microwave safe dish, add poppy seeds and stir to combine.
- Using a pastry brush, brush rolls liberally with butter and poppy seeds.
- Place rolls in preheated oven and bake 12 to 15 minutes until light golden brown.
- Serve immediately.

It doesn’t always work, for example with cookie cutters that have a more defined shape, the shape distorts as the dough rises! But, heck, it’s always fun to try! Who knows, maybe a fun shape will emerge that will make the kids laugh, like a monster or something…
