All Time Favorite Copycat BBQ Chopped Chicken Salad

BBQ Chicken Salad with dressing

Sometimes I crave a really good salad!  Most of the time it’s something I can throw together, but there are times when I just want a very specific salad that I can only get at a restaurant.  One of my all time favorite salads is a BBQ Chopped Chicken Salad from Panera Bread.   It’s the perfect blend of yum and crunch!

Although I love this salad, I don’t love to spend almost $10 every time I want it, so I’ve done my best and come up with my own version that is super tasty and will serve up to four people and not cost $40!  And even if you don’t have chicken or are vegetarian, this salad has enough to fill you up and leave you satisfied.

Making BBQ Chicken Salad

Place ingredients in bowls.

Tossed BBQ Chicken Salad

Toss with dressing!

Ingredients

Scale
  • 4 cups romaine lettuce
  • 1 cup diced or shredded cooked chicken
  • 1/2 cup black beans, drained
  • 1/2 cup corn (frozen or canned and drained)
  • 1/4 bell peppers and onions
  • 1 avocado, cubed
  • 1/4 cup shredded cheese
  • 1/2 cup tortilla chips, crunched up
  • 1/4 cup ranch dressing
  • 3 tablespoons BBQ sauce

Instructions

  1. Chop the lettuce and place at the bottom of the bowls
  2. Add Chicken, peppers, onions, corn and avocado
  3. Sprinkle with cheese
  4. Crunch tortilla chips over the top
  5. Drizzle ranch dressing and BBQ sauce
  6. Toss to mix ingredients and coat with the dressing

Notes

I used frozen roasted bell pepper and onion mix from Trader Joe’s
