This is my list of my Top 5 Favorite Thanksgiving Turkey Leftovers:
- Turkey Sandwich #1 and #2
- Turkey Soup
- Turkey Shepherd’s Pie
- Turkey Pull-Apart Pot Pie
- Turkey and Avocado Salad with Craisins
Okay, I guess that’s technically 6 because I have two versions of my Turkey Sandwich (but the difference is just one tiny, little ingredient, so I didn’t want to count it as two sandwiches!).
Per my earlier post, Top 3 Reasons to Have Turkey for Thanksgiving, my #3 reason is leftovers! I love turkey and turkey leftovers are some of my favorite eats. These five are my favorites and lucky for all of you, I’m sharing them all at once!
I’ve created them each as a separate post and separate recipe for “search” reasons. So, they are all listed below this post, or you can view them by clicking on the links above (each item on the above list is hyperlinked to the recipe).
While Turkey Soup is up there towards the top of the list but in the second position, it is listed #2 because it is labor-intensive. Also, my Turkey Soup is a two-day process because I boil the carcass, cool it, de-bone it (reserving the stock) and then refrigerate the stock overnight so that the fat rises to the top and congeals, making it easier to skim off and discard. So, even though it is labor-intensive, it’s delicious, wholesome and seasonal (I don’t usually make it more that 2 or 3 times a year), so worth the little extra effort and thus, deserves the #2 spot on the list.
Turkey Shepherd’s Pie makes it to the list both for deliciousness and ease of creating. It’s basically taking all the leftovers (Roasted Turkey, Cornbread Stuffing, Turkey Gravy, Creamy Mashed Potatoes and cranberry sauce), piling (or maybe a more dignified way to say it would be “layering”) all the ingredients in a baking dish and warming it up. Easy, peasy! And, almost as good as the actual Thanksgiving Day feast.
Turkey Pull-Apart Pot Pie is another favorite for me. The creamy deliciousness of the Bechamel (white sauce) or leftover gravy (if you have enough), plus leftover peas, plus pre-made dough with chunks of leftover turkey and voilà! Instant Turkey Pull-Apart Pot Pie! I make mine in individual servings using ramekins that can be baked in the oven.
And, lastly, just because I live in California and we have avocados in the grocery store year-round, my last choice for my Top 5 Favorite Thanksgiving Turkey Leftovers goes to my Turkey and Avocado Salad with Craisins.
