The Post-St. Patrick’s Day Post is a curiously odd title for this post, but it is after (post) St. Patrick’s Day and it is a wrap-up post of our St. Patrick’s Day celebration activities! So, a “post” post, if you will. A little leprechaun mischief was involved in that title {grin}!
How was your St. Patrick’s Day celebration? We celebrated St. Patrick’s Day a day early, on Sunday, with a few blogging friends. And, of course, we celebrated (just a little) on St. Patrick’s Day, too. Wait a minute…let me rephrase that:
- Charlie and I celebrated just a little. We had St. Patrick’s Day leftovers for lunch and made a pizza from leftovers for dinner.
- The Princesses P celebrated a little more. They wore green to school, packed special sandwiches for their St. Paddy’s Day lunches, and celebrated at their respective schools.
- Tiffany celebrated a lot! She works part-time at an Irish Pub and St. Patrick’s Day is one of their busiest days (big surprise)! But, although she “celebrated” a lot (12 hours on her feet!), it really wasn’t “celebrating”, but rather serving a bunch of rowdy, overgrown, mischievous leprechauns! I’m sure she has lots of interesting stories to share…
Here’s what happened Sunday:

Heather, our blogging friend from It’s a Lovely Life, joined us and brought her 3 daughters (princesses, too), who joined the Princesses P in initiating all kinds of leprechaun mischief!

I set up a crafting table to keep the kids occupied so that the adults could visit. They made rainbows and leprechauns from crafting kits, colored, created pictures with stickers and filled their arms with St. Patrick’s Day tattoos. This was somewhat successful in that when you live on 8 acres and it’s a gloriously beautiful day, Mother Earth beckons and wins out over crafting with leprechauns. So, a treasure hunt was in order, but with no pre-planning, the treasure hunt became about finding bird feathers, special rocks, flowers, leaves, seed pods, etc. Still fun for them, but I’ll remember this for the next St. Patrick’s Day party – a leprechaun treasure hunt with more of a St. Patrick’s Day theme!
I’d set the table awash in green with shamrocks, leprechauns, pots of gold (filled with Lucky Charms; forgot to take a picture after I filled the little black pots!) and rainbow lollipops. I made Emerald Island Guacamole (also known as GuacaMolly on this blog!) and didn’t remember take the above photo until it was half gone!
Deliciously creamy and spicy Golden Leprechaun Dip was available to make Golden Leprechaun Bites…
And Amy brought her famous Creamy Spinach and Artichoke Dip that she made for the SMSummit that I shared in 17 Girls and a Baby! Amy still hasn’t posted this recipe on her blog, but when she does, I’ll recreate it for this blog and include a link to her blog so that all of our readers can share in the awesomeness of her dip! Because, truly, it is the BEST Spinach and Artichoke Dip I’ve ever eaten. Hands down. No leprechaun half-truth, I swear.
She also brought delicious deviled eggs and a few other nibbles, but I forgot to take pictures of those, because (1) it was all about her Spinach and Artichoke Dip and how happy I was she brought it {grin} and (2) it was all about visiting with friends and family and forgetting to take photos!
Leprechaun Nectar (foreground – which is just a pre-made strawberry kiwi punch I bought at the store) and Leprechaun Lime Fizz (background – which is frozen limeade concentrate mixed with 7-Up and lime sherbet) quenched the thirst of our Irish Princesses. Finally, when I was finished cooking, it was time to eat the main meal (as if the hors d’ oeuvres weren’t enough!).
Keeping with a green, gold and orange theme, I made vegetarian-friendly, kid-friendly food:
Erin Go Bragh Spinach Quesadillas – I cut shamrock shapes from spinach quesadillas, tore up cheddar cheese and melted them one-by-one in the microwave on a ceramic plate. I let them cool on the ceramic plate until they were slightly warm to the touch and then removed them with a metal spatula to the serving plate. This technique (which I “discovered” by screwing up!) kept the melted cheese intact around the shamrock. Here’s a picture:
I made Rainbow Shamrock PB&J Sandwiches by making peanut butter and jelly sandwiches, with an assortment of different jellies for the “rainbow”, and then cut them out carefully with a shamrock cookie cutter:
A simple fruit salad of green and gold fruit (pineapple, bananas, green grapes, kiwi and green apples) complemented the menu for the younger children:
And, to make sure that adults and kids alike had something cheesy, creamy and delicious, I made Rainbow Tortellini (recipe coming in a future post; stay tuned…):

And, just to make sure that we had enough “greens” in our diet, I made Rainbow Roasted Baby Veggies (miniature zucchini, carrots, yellow squash and mini bell peppers, sprinkled with olive oil, salt and pepper and roasted in 400 degrees oven for 20 minutes):
And, Wearing of the Green Salad (field greens including baby arugula, yellow cherry tomatoes, diced yellow peppers, diced green apple, pistachios tossed in a citrus vinaigrette with Feta cheese served on the side):
And, if all of this deliciousness wasn’t enough, I made desserts! Shamrock Pie Crust Cookies (see my earlier post for the recipe: Sweetheart Pie Crust Cookies):

Needless to say, there was plenty to eat and a variety of choices! And, I bought Rainbow Sherbet, but I forgot to serve it!
