These cute, little, heart-shaped gems are savory and delicious and can be used in many recipes. Have your children or grandchildren help you – a great project for a wintry afternoon.

Ingredients

  • 2 tablespoons olive oil
  • 1 red or yellow onion, peeled and finely chopped
  • 1 red bell pepper, seeded and finely chopped
  • 3 cloves of garlic, peeled and finely minced
  • 3 large eggs, at room temperature
  • 1/3 cup whole milk, at room temperature
  • 3 tablespoons tomato paste
  • 1 1/2 teaspoons salt
  • 1 teaspoon ground black pepper
  • 3 pounds ground turkey
  • 1 1/2 cups Panko breadcrumbs
  • 3/4 cups grated Parmesan cheese
  • 1/4 cup chopped fresh Italian flat-leaf parsley
  • 1/4 cup chopped fresh basil
  • Non-stick cooking spray

Instructions

  1. Heat olive oil in medium-sized skillet over medium heat.
  2. Add onions and red pepper and saute’ for a few minutes.
  3. Add garlic and continue to saute’ until onions are translucent.
  4. Break eggs into a small mixing bowl and whisk them until yolks and whites are combined.
  5. Add milk, tomato paste, salt and pepper and whisk to combine.
  6. Place ground turkey into a large mixing bowl, add breadcrumbs, Parmesan cheese, parsley and basil.
  7. Using clean hands, gently mix turkey mixture until ingredients are combined.
  8. Add egg/milk mixture and mix again to combine.
  9. Preheat oven to 350 degrees F.
  10. Line 3 large cookie sheets with foil and spray each with non-stick cooking spray.
  11. Using a 2 1/4″ x 2 1/4″ heart-shaped cookie cutter, make heart-shaped meatballs, placing each on prepared cookie sheets.
  12. Bake in preheated oven for 35 to 40 minutes.
  13. Serve with Fire Roasted Slow Cooker Arrabbiata Sauce.

Notes

Makes 10 servings of 3 to 4 meatballs for each serving. Make the heart-shaped meatballs one of two ways: (1) plop a hunk of meat mixture on a plastic cutting board and pat out to the depth of your cookie cutter. Punch out hearts and remove excess meat mixture from around cookie cutter. Lift cookie cutter away from meatball and transfer heart meatball to prepared cookie sheet. OR (2) fill cookie cutter with meatball mixture, lift cookie cutter off of meatball, then transfer to prepared cookie sheet using spatula. Repeat process (whichever works best for you) until all heart-shaped meatballs are made and meat mixture is used up.
