Sweet Onion, Red Pepper and Italian Sausage Flatbread Pizza is such a ridiculously long title for such an easy recipe! 51 characters not including the spaces! When naming a recipe, how does one choose? For me, I like to consider several factors:
- the main ingredients
- the main flavor profile
- how many servings, i.e., “individual”, “family-sized”, “potluck”
- the time of year, such as Christmas, Summer, Autumn
- whether it’s “lite”, “healthy” or just plain “amazing”
- whether it’s ethnic inspired
- whether it’s “grilled”, “barbecued” or a “slow cooker” recipe
- does it have a prominent herb or spice, like “cinnamon” or “thyme”
- is it layered? deep dish? skewered? shredded?
- cheesy? dreamy? tangy? spicy? loaded?
In this particular case, each of the 3 main ingredients (onion, red pepper and Italian sausage) contributes to the overall success of the recipe and while I was tempted to leave out one (for example, leave out red pepper in the title), it clearly was a glaring error just by looking at the photos alone! The red peppers are a contributing factor to the Sweet Onion, Red Pepper and Italian Sausage Flatbread Pizza’s visual appeal, so leaving those two words out of the title would be a huge mistake {grin}.
And, the words “flatbread” and “pizza” seem redundant, but I think they convey what I’m trying to “sell” with this recipe – that it’s a pizza recipe make on store-bought flatbread! Easy!

Anyway, back to Sweet Onion, Red Pepper and Italian Sausage Flatbread Pizza…
I must tell you that this is one of Charlie’s favorite pizzas. He’d eat it several days a week if I made it! Each one of those flavors – the sweet onion, the red pepper and the Italian sausage – is a major contributor to the overall tastiness of dish. Leaving one out would make a different pizza altogether!!
Side note: don’t you just love that my Bialetti pizza chopper is about the same size as my pizza? For years I used one of those little rolling pizza cutters with limited success. Then, one day I got a bee in my bonnet (a “Charlie-ism”) and decided to bite the bullet and buy one of these babies. Best $20 I ever spent!
How did I ever live without this treasure? With one thrust, it slices through an entire pizza, making clean cuts – no more back-and-forth rolling motion until you get the pizza into slices!
Here’s the recipe:
Sweet Onion, Red Pepper and Italian Sausage Flatbread Pizza
Sweet onion, red pepper and Italian sausage combine on a flatbread with cheese to make a deliciously satisfying lunch or dinner.
- Prep Time: 10 mins
- Cook Time: 20 mins

Ingredients
- 1 pre-made flatbread
- 1 1/2 lengths of Italian sausage, casings removed
- 3 tablespoons olive oil, divided
- 1/2 medium yellow onion, peeled and sliced
- 1/3 large red pepper, seeded and sliced
- 1/2 cup shredded mozzarella cheese
- 1/4 cup shredded Parmesan cheese
Instructions
- Preheat oven to 425 degrees F.
- Heat 1 tablespoon olive oil to non-stick skillet; add onions and peppers and saute’ until onions are slightly translucent, stirring occasionally (about 3 minutes; don’t over-cook – you want the onions and peppers to be a little crunchy).
- In a separate small skillet, break sausage into chunks and saute’ until no longer pink.
- Place flatbread on a baking sheet and sprinkle on remaining 2 tablespoons of olive oil, spreading with a pastry brush.
- Using a large spatula or pizza peel, transfer flatbread directly to hot oven racks (not on baking sheet) and bake for 3 minutes.
- Using a large spatula or pizza peel, remove flatbread from oven to baking sheet.
- Sprinkle mozzarella cheese evenly over flatbread, followed by Parmesan cheese.
- Add onions, peppers and sausage to flatbread.
- Return to oven (on baking sheet) and bake 8 minutes more until edges are lightly browned.
- Remove from oven and transfer to cutting board; cut into 6 to 8 pieces.
- Serve immediately.
Notes
Cooking time includes cooking onions, peppers and sausage.
