Redemption Brownie Bites

Have you ever made anything to eat that was gaggingly dreadful?  Have you ever made a dish that turned out so bad that you threw the whole thing out?  I have; and, I made it the other night.

And, I’ve been doing that (making gaggingly dreadful meals) with surprising frequency of late!  I guess it’s because I’ve been experimenting more, trying to go out on a limb and create the next Cronut or anything with cake batter or sprinkles or something equally amazing {grin}.

I was going to title this post “How to Ruin Dinner in 3 Easy Steps”.  But, I decided Redemption Brownie Bites was something that might be read by readers.  After all, who wants to read about ruining dinner? {grin}

We don’t have many slow cooker recipes on our site, so I wanted to make a slow cooked meal.  I scoured my cookbooks looking for inspiration and came across several recipes that sounded promising.  But, I didn’t have all the ingredients on hand.  So, I did what I always do in those instances – I improvised.

I used rice instead of noodles in the dish.  My slow cooker cookbook said that rice takes 7 to 8 hours to cook on low in a slow cooker.  So, I put in some rice, added water and some seasonings, plus a secret sauce and chicken.

Four hours later, I checked the stuff in the slow cooker and it was done!  Yep, done in time for lunch, not dinner!  Plus, the rice was sorta “crispy” around the edges, so I added some cream cheese and canned cream soup plus pecans and currants.  I know, it sounds strange – the pecans and currants.  But, I make a really delicious wild rice side dish with pecans and currants and I thought it would be great to add to this slow cooker chicken and rice dish.

Well, I was wrong!

Again, we did not have a backup plan (I’ve written about this before – not having a dinner backup plan, that is), so we ate as much as we could stomach, then we ate brownies!

These brownies to be exact.  Which were another experiment.  You see, I put little Snickers bites in the middle of these mini Brownies and baked them in a mini muffin pan.  I’ve seen several Brownies on Pinterest with candy bits and pieces all over them, so I thought little Snickers bites would be perfect!

But, guess what?  They melted into oblivion…

But, chocolate isn’t so bad, is it?  In any form, right?  And, they look really yummy, too, don’t you think?

And, they were.  They just weren’t “special”.  Just Brownies…but for that night, the night of the “gaggingly dreadful slow cooked chicken and rice dish for dinner” night, they were Redemption Brownie Bites {grin}.
