Party preparation is in full effect around the royal abode of the Princesses P. Tomorrow is the big day that Princess Sweetie Pie will be three! The Princesses P have been great helpers (most of the time) and are enjoying the craftiness that I have suddenly embraced.
Yesterday Princess Sweetie Pie picked out some mix at the store for us to make Whoopie Pies so she could bring them to preschool to celebrate with her friends who can’t make it to her party. Well, this Mama made a “whoopsie” and didn’t pay attention to the fact that they only made 12 pies. Unfortunately this discovery was made after the girls were asleep and I was hoping to get into bed after these things were made in just about a half hour. Silly me!
So Plan B; the good old fashion cook-a-cake-from-scratch plan. Sounds delicious, but doesn’t sound like bedtime would be in a half hour.
I turned to the trusty Better Homes and Gardens cookbook where I used their recipe for Yellow Cake. I loved the fact that this was all ingredients that I added and no extra stuff that is sometimes found in pre-made mixes, but I’m not going to lie, it did take a bit longer than just dumping a mix in a bowl, adding eggs, oil and water.
Yellow cake seemed way too “plain” for my Princess Sweetie Pie who is anything but plain. I decided that I would be creating a Midnight Rainbow! Rainbow Cake that is! Why not? And while I was at it I would also make it a “Three Cake”! I was inspired by a good friend and neighbor who recently made a very cute “5” cake for her daughter. I was resigned to the fact that it was going to be a late night.
