The above photo is IONutrition’s Hearty Granola. With rolled oats, walnuts, almonds and sunflower seeds with a hint of vanilla and maple syrup, this breakfast kept me full for six solid hours! Organic and gluten free, they recommend serving with almond milk, but I prefer soy milk. Yum!

Basil Zucchini Quinoa
Basil Zucchini Quinoa is a great option for lunch. Made with quinoa, sweet potato, purple cauliflower (can you see the bits and chunks of purple peeking out?), yellow cauliflower, zucchini and onion, serve this dish either cold or warm.
The cold or warm option makes it ideal for those days when you don’t have access to a microwave. The serving size is large enough to portion out into 3 servings as a side dish. With 15 grams of protein, this dish will keep you going for hours! And, this satisfying dish packs on flavor with garlic, basil, coriander, turmeric and several other herbs and spices.
Basil Sweet Potato and Beans
Basil Sweet Potato and Beans is a perfect dinner choice. Made with black beans, cremini and porcini mushrooms, carrots, onions, celery and sweet potato, this was my favorite dish! I love beans and this hearty meal packs in 14 grams of protein. Delicious for lunch, too, this serving size is large enough to feed 3 people as a side dish.

I love oatmeal and I love walnuts! So, Walnut Peach Oatmeal was a perfect breakfast choice for me. Sliced and chunked peaches add a delicious bite of fruit, making this a great way to start my morning.
Parsley Green Bean Rice
Parsley Green Bean Rice combines brown rice with green beans, carrots, onion, zucchini and tomatoes into a hearty and satisfying lunch or dinner option. Served cold or warm, I liked it better warm. Serving 2 as a side dish, Parsley Green Bean Rice is flavored with parsley, garlic, basil and tarragon creating a unique flavor profile.
Tomato Zucchini Lentils
Tomato Zucchini Lentils combines French lentils with carrots, onions, eggplant, zucchini and tomato and weighs in at a whopping 21 grams of protein! Definitely enough protein to keep you going for hours and hours, this dish is best served warm. Also large enough to serve 3 as a side dish, these lentils are flavored with garlic, smoked paprika and cilantro.
