In several of my earlier posts, I’ve mentioned a lonely, unused, unloved heart-shaped cookie cutter that has languished for 5 years in a kitchen drawer. With the creation of Heart in the Hole (as opposed to Toad in the Hole) for breakfast, this cookie cutter has now been resurrected…like the Phoenix in mythology rising from the ashes.
My sweet little heart-shaped cookie cutter has now created a total of five different Valentine’s Day dishes!
- Sweetheart Pie Crust Cookies
- Sweetheart Cream Cheese Spread
- Sweetheart Maple and Sage Sausage Patties
- Sweetheart Watermelon and Arugula Salad
I have lots more ideas for my sweet little 3-inch heart-shaped cookie cutter, but I’m outta time! After all, tomorrow is Valentine’s Day! Alas, there’s always next year!
My 3-inch heart-shaped cookie cutter is just the right size for a slice of bread. I used French Toast Bread, which is a special loaf made by Safeway (Vons) brand grocery stores that is slightly thicker than a normal slice of bread.
Instead of buttering the bread first, I melted a couple of tablespoons of butter in a skillet and added the bread with the punch-out hearts. After they were brown and crispy on the underside, I flipped them over and cracked an egg in each one.
So cute! Crispy, buttery – cooked to perfection with a slightly runny yolk!
I served Heart in the Hole with my Sweetheart Maple and Sage Sausage Patties and my Sweetheart Watermelon and Arugula Salad with a strawberry added for garnish. A delicious and special Valentine’s Day breakfast or brunch for your family and loved ones!
And, what did I do with the little leftover heart cut-outs? Stay tuned for tomorrow’s post to find out!
Here’s the recipe:
Heart in the Hole aka Valentine’s Day Edition of Toad in the Hole
I’ve labeled this an “American” dish, but I’m sure all my English friends and family will take exception to this because Toad in the Hole is a classic English recipe! Forgive my “creative licensing” of this recipe and enjoy this treat on Valentine’s Day!
- Prep Time: 5 mins
- Cook Time: 8 mins
- Total Time: 13 mins
- Yield: 4 1x
- Category: Breakfast
- Cuisine: American
Ingredients
- 4 tablespoons butter (1/2 stick)
- 4 slices thick-sliced sandwich bread
- 4 eggs
- Salt and Pepper (as needed)
Instructions
- Place sliced bread on a cutting board.
- Using a 3-inch heart-shaped cookie cutter, punch out the center of each slice of bread, reserving the punched hearts for another recipe.
- Melt 2 tablespoons butter in a non-stick skillet.
- Add bread and cook for several minutes over medium heat until bread is lightly browned on the underside.
- Flip bread slices over and add 2 more tablespoons of butter.
- Crack one egg into each heart-shaped hole and cook for a few minutes more until egg is set.
- Don’t overcook unless you don’t want runny egg yolks.
- Remove from skillet, serve and pass the salt and pepper.
Hope you have a wonderful Valentine’s Day with your loved ones!
