Easy Cheesy Broccoli Casserole is so easy to make. Frozen broccoli mixed with a creamy sauce topped crushed croutons, this recipe is a good alternative for a holiday dinner side dish. And, Easy Cheesy Broccoli Casserole is an easy potluck recipe for your next get-together with friends and family.
The cheesy sauce is made from combining cream of mushroom soup, cream cheese spread, mayonnaise, milk and shredded cheddar cheese. I use a mixer to combine these ingredients, which makes the sauce a creamy texture with almost no effort. No need to heat the sauce ahead of time, because baking this casserole in the oven will melt the cheese.
The broccoli is heated on the stove top in my recipe, but you could do it in a microwave oven. I do it on the stove top because I have a teeny, tiny microwave oven that I use primarily for reheating my coffee!
The croutons give Easy Cheesy Broccoli Casserole a nice, flavor-packed crunch. No need to add any other herbs and spices to this dish {grin}!
If you make this casserole ahead of time, leave off the croutons until ready to bake and refrigerate it until needed.

Easy Cheesy Broccoli Casserole

Ingredients
- 32 ounces frozen broccoli
- 1 – 10 3/4 ounce can of cream of mushroom soup
- 1 – 8 ounce carton of garden vegetable cream cheese spread
- 1/4 cup mayonnaise
- 1/2 cup milk
- 2 cups shredded cheddar cheese
- 1 – 8 ounce package ready-made croutons, crushed (choose your favorite flavor)
Instructions
- Preheat oven to 350 degrees F.
- Place frozen broccoli in large non-stick skillet fitted with a lid.
- Heat on stove top over medium heat until bright green, stirring occasionally (about 10 minutes).
- In medium mixing bowl, mix together soup, cream cheese, mayonnaise, milk and shredded cheese using an electric mixer.
- Spread cooked broccoli in a 9″ x 13″ backing dish.
- Pour soup mixture over broccoli, distributing evenly.
- Sprinkle with crushed croutons.
- Bake, uncovered, in preheated oven for 50 to 60 minutes until hot and bubbly.
Notes
If made ahead, leave off croutons and refrigerate after assembly. When ready to bake, top with croutons and bake as directed (may need to increase cooking time to account for refrigeration).
