I know it’s kinda silly, since it has only 3 ingredients plus any dressing you put on top, but I’m always looking for new ways to serve Caprese!  And these Caprese Salad Roll-ups are my attempt to present this salad in a different and unique way.

I love caprese salad.  It’s so light and fresh!  And, lite as in “lite” on the calories.  Fresh ingredients and a lite salad dressing, this makes a good snack, appetizer, or a salad to accompany a meal.  Did I mention that I’m on a diet?  This recipe is great for diets, too, as long as you don’t eat the whole roll!

While shopping at the grocery store recently, I came across this new product and just had to try it!  Made by Bel Gioioso, it’s an “Unwrap and Roll Fresh Mozzarella Cheese” log.  I thought, “how cool” and decided to give it a try.

Here’s what I did:

See the crack in the cheese at the bottom right?  This is where it gets tricky.  Be very, very careful not to crack your cheese! {grin}  Also, this mozzarella cheese log unrolls to quite a long length, so make sure you have either a clean counter top or a long piece of wax paper or a very large cutting board like the one above.

This is another tricky thing to this recipe – rolling up the log.  Try to roll it as tightly as you can without tearing the cheese.  I would recommend slicing the tomatoes thinner than mine (if you have a mandolin, I would use that) because the next step, slicing the log, is tricky too!

I was only able to get 8 slices out of this Caprese Salad Roll-up log and as I sliced, they somewhat fell apart!  I’m going to post this on Pinterest, but you may want to save this to your Pinterest Failures board!!! {grin}

I plated them, drizzled them with Newman’s Own Lite Balsamic Vinaigrette and topped them with a pretty basil garnish.  You can see the little pile of unplated roll-ups in the distance beyond the plate.  After I took these photos, I just plopped the rest on another plate, drizzled them with the dressing and served them just like that to my family.  After all, they were “just family” and in the end, all they wanted was something to eat!

In the end, they were delicious and there wasn’t a scrap left!   I’m sharing the recipe just in case you have better luck with rolling the roll-ups!

Yet another, different way to make Caprese Salad. A little fussy and somewhat successful but still delicious!

Ingredients

Scale
  • 1 Bel Gioioso Fresh Mozzarella Cheese “Unwrap and Roll” log
  • 1 or 2 fresh tomatoes, washed and thinly sliced
  • 1 bunch of fresh basil leaves
  • 1/4 cup Newman’s Own Lite Balsamic Vinaigrette

Instructions

  1. Wash and thinly slice the tomatoes.
  2. Wash the basil leaves and pick off the stems.
  3. Carefully unroll the Bel Gioioso Fresh Mozzarella Cheese “Unwrap and Roll” log on a clean flat surface (use wax paper so prevent sticking); be careful not to tear cheese.
  4. Place sliced tomatoes in a single layer on top of unrolled cheese log.
  5. Place basil leaves on top of tomatoes.
  6. Carefully roll up log as tightly as possible without tearing cheese.
  7. Slice into 6 to 8 pieces and carefully transfer slices to serving plate or platter.
  8. Drizzle with Balsamic Vinaigrette and top with fresh basil for garnish.
  9. Refrigerate or serve immediately.
