Black Fig Parfaits

Black Fig Parfaits are an easy and delicious way to add for fruit and fiber to your diet.  Plus, if you are dieting like me, it’s an alternative dessert instead of reaching for cookies and ice cream!  Black figs are in season right now and I bought a package and we’ve enjoyed many delicious recipes with this tiny fruit.  These Black Fig Parfaits are the first!

Craving dessert the other night, I didn’t want to “go off the rails”, so-to-speak, because I’ve reached my first plateau on this diet journey.  I’ve had some difficulty breaking past my current weight, so I’m attempting to be more thoughtful of what I eat.  So, digging through the pantry, I found some granola.  But granola alone is rather high in calories, so I only wanted a couple of tablespoons and not a cup!  But, I knew a couple of tablespoons would not satisfy my snack attack!

So, next to the refrigerator to see if I had any yogurt left.  Lucky me had just the right kind – a vanilla honey Greek yogurt packed with protein!  And, why not add fruit?  The package of figs was calling my name!

So, here’s what I did:

Granola in glasses for Black Fig Parfait

Put about a tablespoon of your favorite granola in a parfait glass.  I made one for Charlie, too.

Greek yogurt for Black Fig Parfait

Add 1/2 of a 4 to 6 ounce carton of Greek yogurt in each glass.  I used a honey-flavored yogurt.

Cut black figs for Black Fig Parfait

Wash and quarter black figs.

Place 3 quarters of a fig in each glass, reserving one quarter of the fig for the top.

Repeat the layers:  add another tablespoon of granola, the remaining yogurt and top with one quarter of the fig.

Black Figs with granola and yogurt is a healthy alternative to a standard dessert. Eat it for breakfast, too!

Ingredients

Scale
  • 2 tablespoons favorite granola
  • 4 to 6 ounces of Greek honey-flavored yogurt
  • 1 black fig, washed and quartered

Instructions

  1. Place one tablespoon granola in the bottom of a parfait glass.
  2. Top with ½ of the carton of yogurt (2 to 3 ounces).
  3. Place 3 pieces of the quartered fig on top.
  4. Add another tablespoon of granola.
  5. Add the remaining carton of yogurt.
  6. Top with remaining quarter of fig.
  7. Serve.
