As you can see by the title of this recipe, Bizzy’s Mini Chocolate Cupcakes with Erin’s Coffee Mocha Frosting is a family affair! All my brother’s children like to cook, but defer to master baker/decorator, Erin, for the finishing touches.
So, one of the days that Erin was baking and decorating Erin’s Iced Sugar Cookie Cutouts (it was a 2-day project), Bizzy set about making Bizzy’s Mini Chocolate Cupcakes for Ryan’s upcoming birthday party.
Bizzy had just finished giving me a private viola recital (see yesterday’s post, The Virtuoso) and went over to the counter by the sink. She whipped out the family’s yellow mixing bowl (a large Tupperware bowl) and started measuring and mixing.
“Biz, what are you doing?”, I asked.
You see, Erin and Molly were at the island making Erin’s Iced Sugar Cookie Cutouts and Ryan had just finished whipping up a batch of their family’s secret recipe chocolate chip cookies! So the kitchen was a blur of activity! Glenn and Missy (Mom and Dad) had escaped to the living room to stay out of the commotion!

So, I grabbed my camera and started snapping away! Forgive the less than perfect quality of Bizzy in action! By this time, it was very dark outside and the kitchen lighting was challenging for this novice photographer {grin}!
In no time flat, Bizzy had whipped up the batter, which is runny, not like cake batter at all.
Nonetheless, these cupcakes bake up beautifully and are quite delicious! If you are looking for a completely homemade chocolate cupcake recipe, this is the one!
This is the recipe on the back of the tin of Hershey’s Unsweetened Cocoa powder, cut in half. The recipe on the box will make 30 regular size cupcakes, so if you need a quick and easy recipe for a bunch of cupcakes, like for a soccer team, this one’s for you!
This hubbub of activity took place late at night, so the finished cupcakes were left to cool overnight. The next morning, Erin worked her magic, decorating them all before she left for work (and before I got out of bed)! Aren’t they beautiful?

Bizzy’s Mini Chocolate Cupcakes with Erin’s Mocha Toffee Frosting
Homemade batter whipped together in no time, these cupcakes are a great recipe for a crowd!

Ingredients
For the Cupcakes:
- 1 cup granulated sugar
- 7/8 cup all-purpose flour
- 1/2 cup unsweetened cocoa powder
- 3/4 teaspoon baking powder
- 3/4 teaspoon baking soda
- 1/2 teaspoon salt
- 1 egg
- 1/2 cup milk
- 1/4 cup canola oil
- 1 teaspoon vanilla
- 1/2 cup boiling water
For the Frosting:
- 1 2/3 cup confectioner’s (powdered) sugar
- 2 tablespoons unsweetened cocoa powder
- 1/2 cup butter
- 1/8 teaspoon salt
- 3 tablespoons strong hot coffee
- 1 teaspoon vanilla
- 1/4 cup toffee bits
Instructions
For the Cupcakes:
- Preheat oven to 350 degrees F.
- Place cupcake wrappers in two mini cupcakes pan (18 cupcakes, each).
- In a large mixing bowl, combine sugar, flour, cocoa, baking powder, baking soda and salt.
- Add egg, milk, oil and vanilla and beat on medium speed for 2 minutes.
- Stir in boiling water (batter will be thin).
- Use an ice cream scoop to evenly distribute batter in cupcake pans.
- Bake for 10 minutes in preheated oven or until toothpick inserted in middle of cupcake comes out clean.
- Remove from oven and cool completely.
- Frost with frosting and sprinkle with toffee bits.
For the Frosting:
- Sift together confectioner’s (powdered) sugar and cocoa into mixing bowl.
- Add butter and beat on low until soft.
- Gradually add sugar, blending until creamy.
- Add salt and hot coffee and beat for 2 minutes.
- When cool, add vanilla and beat until combined.
- Let stand 5 minutes before spreading on cupcakes.
