A box of yellow cake mix – how easy is that! In my attempt to put on my baker’s hat and bake cookies for the holidays, I decided that turning to a box of yellow cake mix to start off my baking frenzy was a good way to churn out several different cookies in a matter of a few days. And, making cookie bars is far quicker than baking individual cookies one cookie sheet at a time.
So, I found a few standards in my recipe archives, plus linked into some of my Pinterest pins, and voila’ – five easy and delicious cookie bar recipes you’ll be proud to share in any cookie exchange or just as a gift to family and friends over the holidays!
Five separate recipes follow this post. That’s so that you can find them easier at a later date AND so that you can print them whenever you want to and add them to your recipe folder.
We start with Cake Batter Oatmeal Walnut Bars. A complete fluke that I created when trying to recreate a recipe from a cookbook when I was too tired! Oh well; they turned out delicious so they are now a keeper and a new favorite.
The next one to follow is Cake Batter Fudge Bars. Again a recipe I somewhat created because I screwed up the recipe I was following from a Pinterest pin! What, two screw-ups in a row? What can I tell you? Although I’d like to think that I am paying COMPLETE attention to what I’m doing at the moment, I’m often distracted. So, these two recipes are The Price of Distraction for me! I’ll try to do better – I promise 🙂
The third recipe is a classic – what are known in the baking world as Chess Bars. I’m calling them Cake Batter Chess Bars because they start with a box of yellow cake mix, of course!
The fourth recipe is another Pinterest pin, Caramel Chip Bars, renamed by me as Cake Batter Triple-Chocolate Chip Bars and this time, I DID FOLLOW THE RECIPE, so I can’t take credit for the absolute deliciousness of this recipe, but I renamed it anyway and the reason will become clear when you read that post (don’t worry – I do credit the original source so you can visit her site, too).
The final recipe is an original creation of mine. I love the combination of orange and vanilla like in a 50/50 ice cream bar. So, I created this recipe just for all of you and, of course, I’m calling it Cake Batter 50/50 Bars! Hope you’ll love it!
Do you have any favorite Cookie Bar recipes you want to share? Made from scratch or starting with cake mix? We’d love to hear from you!
