Chocolate Hot Cross Buns

- 10 fl oz. milk
- 14 oz. strong white bread flour
- 2 oz. of cocoa powder
- 1 packet of instant yeast
- 1 tsp ground cinnamon
- 1 large egg
- 1 tsp vanilla extract
- 2.5 oz. of raisins
- 2.5 oz. of leftover chocolate egg, broken into small pieces
- 2 oz. of white chocolate
- 2 ounces of plain flour
- Set two tablespoons of milk aside for later, but warm the rest in the microwave or a small pan. In a separate mixing bowl, mix the flour, cocoa, yeast, sugar, and cinnamon.
- Whisk the large egg and vanilla extract into the warm milk. Mix the liquid mix into the dry ingredients and stir together to make a dough. Transfer the soft dough onto a clean work surface and knead for 10 minutes. Your dough should become smooth and elastic.
- Put the dough back into a clean mixing bowl, cover with oiled plastic wrap and leave it until it’s doubled in size – this should take around an hour.
- Once risen, knead raisins and chocolate pieces into the dough gently.
- Line a large baking tray with parchment paper, divide the dough into 12 and roll each portion into a ball. Arrange your buns onto the tray and leave some room for rising. Score a cross into the top of each hot cross bun and cover the tray with more plastic wrap until they have doubled in size again.
- Preheat your oven to 375F. Melt your white chocolate and mix with 2 tablespoons of milk and add the plain flour slowly to make a smooth paste. Add your mixture to a piping bag and save for the next step.
- Use the leftover milk to glaze your buns and put them back into the oven for 15 mins. After this, pipe your white chocolate mixture into the groves on the buns and leave them to bake for another 5 minutes.
